Here is a great recipe for scrummy biscuits that you can try out for your Valentine’s day celebrations! Anything made with love is always yummy, now lets take it to the next level and use our heart shaped cookie cutters, too! We found this brilliant recipe on the BBC website and thought –Valentine’s Day!! This recipe starts with a basic dough then has three different variations, which we’ve adapted for lovely Valentine’s Day themed biscuits!
Basic Biscuit Dough

Ingredients:
250g softened butter
140g caster sugar
1 egg yolk
2tsp vanilla extract
300g plain flour (sifted)
Instructions:
1. With a wooden spoon mix together the butter and sugar. Then add the vanilla & egg yolk, mix to combine. (Why not add a couple of drops of food colouring to make pink biscuits?)
2. Add in the flour (sifted) and again, mix to combine.
Heat oven to 180C/fan 160C or gas mark 4, bake for 15 minutes or until lightly golden brown.
3. Voila! It’s as simple as that! With this basic dough you can try these fun twists:
Lemon Hearts:
Begin by making the basic biscuit dough, add the zest of 2 lemons into the sugar & butter mixture (step 1). Chill in the fridge for 30 minutes or until cool, then roll out the dough into a rectangle shape. Cut the dough with a heart-shaped cutter. Bake with the same instructions for the Basic Biscuit Dough.
To add icing:
Mix together: 140g (5oz) of sifted icing sugar, 4 or 5 tablespoons of lemon juice, and the zest of one lemon. When the biscuits are cooled, try dipping them into the icing for a ”dunked” look, or you can put the icing into a bag and cut a tiny corner off of that bag –then draw hearts on the edges! Or write out ‘I love you!’ Try spelling out a message with one letter on each biscuit. You could also add a couple of drops of red food colouring to really get into the spirit of the occasion!
Get silly! Get creative!
Crushed almond rounds:
Begin making the basic biscuit dough, then substitute 2 teaspoons of almond extract for the vanilla extract. Shape the dough into a log about 8-10cm in diameter. Roll the log in finely chopped, whole, blanched almonds –making sure to press in nuts on all sides. Gently wrap in cling film and chill or freeze (you can make this ahead of time and freeze it for 3-4 days, or just chill it for about 30 minutes until it’s nice and cool.) Slice the log into 1cm-thick biscuits with a sharp knife (a cold and slightly wet knife should help things along). Bake as instructed for the basic dough, until they’re lightly golden and move them to a cooling rack –they’ll firm up at this stage so don’t fret when you pull them out of the oven.
American-style Triple Chocolate treats:
Begin by making the basic dough and substitute 50g of cocoa powder for 50g plain flour (so now you’ll only use 250g). Add 85g of white chocolate chunks, 85g milk chocolate chunks and mix well. Roll out the dough into a rectangle shape and pull out that trusty heart-shaped cutter! Again bake as instructed for the basic dough and move them to a cooling rack where they will firm up.
